Ap­ple cake

2 medium Granny Smiths (or other

cook­ing ap­ples) 100g but­ter, melted 1 large egg 1 cup all-pur­pose flour ¼ cup mesquite pow­der 1 tsp raw green ste­via pow­der 1 tsp cin­na­mon 1 tsp mixed spice 1 tsp bak­ing soda


Pre­heat the oven to 180°C and grease a 20cm (8 inch) bak­ing tin. Quar­ter ap­ples (un­peeled), place in a food pro­ces­sor, and whiz un­til ap­ples are lightly chopped. Add the melted but­ter and egg and process un­til mixed. Add the re­main­ing in­gre­di­ents and process un­til ev­ery­thing is mixed through – don’t overdo it. Pour the bat­ter into a pre­pared bak­ing tin and bake for 45 min­utes, or un­til a skewer in­serted into the mid­dle of the cake comes out clean. Leave 5 min­utes be­fore turn­ing out onto a cool­ing rack.
