2 medium Granny Smiths (or other
cooking apples) 100g butter, melted 1 large egg 1 cup all-purpose flour ¼ cup mesquite powder 1 tsp raw green stevia powder 1 tsp cinnamon 1 tsp mixed spice 1 tsp baking soda
Preheat the oven to 180°C and grease a 20cm (8 inch) baking tin. Quarter apples (unpeeled), place in a food processor, and whiz until apples are lightly chopped. Add the melted butter and egg and process until mixed. Add the remaining ingredients and process until everything is mixed through – don’t overdo it. Pour the batter into a prepared baking tin and bake for 45 minutes, or until a skewer inserted into the middle of the cake comes out clean. Leave 5 minutes before turning out onto a cooling rack.
