Archie's self-crusting zucchini quiche
MAKES: 4-6 4- 6 servings TIME: 45-60 minutes
Zucchini will soon over-run your garden, and this is a great way to use them up. But you can add anything in the fridge to a quiche, from leftover meat and fish to cooked or fresh vegetables.
INGREDIENTS
3 eggs 1 cup flour flflour 1 tsp baking powder 50ml oil 1½ cups milk 1 chopped onion salt and pepper 3 cups grated zucchini 1 cup grated cheese
METHOD
Mix the first seven ingredients together, whisking or beating thoroughly. Pour half of the mix into a medium- medium-sized, sized, greased oven dish, then layer on some of the zucchini. Add the rest of the quiche mix, then the rest of the zucchini, and top with a generous sprinkle of grated cheese. Cook for 30-45 minutes at 180° 180°C. C.
