APPLE PICKLE
INGREDIENTS
3 apples, peeled, cored, and diced
1 small white onion, peeled, and finely diced
2 cloves garlic, finely chopped
2 tbsp peeled, grated ginger juice of
2 lemons
100g white sugar
1 tsp salt
½ tsp ground cinnamon
½ tsp ground nutmeg
100ml white wine vinegar
METHOD
Place all the ingredients in a heavy-based saucepan on a medium heat. Bring to the boil, stirring frequently, until the sugar is dissolved, then reduce the heat to a simmer. Continue cooking for 15 minutes, or until the mix is a syrup. Remove from the heat and allow to cool before serving.
