3 ways to use passionfruit
If your passionfruit crop is coming to an end, here’s some delicious ways to use them up, or save them for later.
PRESERVE IT
Couldn’t be simpler – freeze pulp in ice cube trays.
PASSIONFRUIT CURD
You can replace the lemon in a lemon curd recipe with passionfruit – if it calls for around three-quarters of a cup of lemon juice, you’ll need about 8-10 passionfruit. Passionfruit curd lasts in the fridge for about 10 days or so. It can be mixed into yoghurt, drizzled (or poured) over a pavlova, or makes a great dip for biscotti. TIP: if you make a curd and a pavlova at the same time, the curd uses up the leftover yolks.
DRINK IT
• Slice the top off a passionfruit and pour in a nip of Cointreau.
• Add to sparkling wine instead of berries.
• Make up a sugar syrup (boil 1 cup of sugar and one cup of water until clear), then leave to cool. Mix half a cup of lemon juice, half a cup of passionfruit pulp (you can strain the seeds out if you want to) and a cup of water. Add 70-100ml of the sugar syrup (or more) and mix. Serve with ice and chopped mint.
