POACHED TAMARILLOS
INGREDIENTS
6 tamarillos
½ cup red wine
2 tbsp honey
1 cup water
2 vanilla pods
2 star anise rind of half an orange
METHOD
1 Lightly score the skin of the tamarillo, then blanch in a pot of boiling water for 20-30 seconds. Remove from the pot and peel off the skin.
2 In a large pot, add the red wine, honey, water, vanilla, star anise, and orange rind. Bring to the boil, then add the tamarillos. Return to the boil, then remove from the heat and transfer to a large jar or bowl. Set aside.
3 To serve, top the panna cotta with half a tamarillo and drizzle with poaching liquid.
