CREAMY TARTARE SAUCE

MAKES: 2 cups or so TIME: 5 minutes

This is fantastic with fish and builds on a mayonnaise base of eggs, white wine vinegar, Dijon and oil.

INGREDIENT­S

2 egg yolks

1 tbsp white wine vinegar 1 tsp Dijon mustard 300ml grapeseed oil

3 tbsp crème fraiche

2 tbsp chopped capers

2 tbsp chopped gherkins 2 tbsp chopped fresh parsley juice and zest of 1 lemon salt freshly ground black pepper

METHOD

Add the egg yolks, vinegar, and mustard to a food processor and blitz to combine. 2

With the motor running, gradually add the oil until you have a thick, smooth mayonnaise. 3

Add all the other ingredient­s and stir to combine. Season to taste with salt and pepper.
