Overnight pumpkin oats

TIME: 10 minutes (plus overnight in the fridge)

This recipe is full of nutrients that contribute to good mental health, including tryptophan and omega-3 fatty acids. It’s also an easy, healthy, and tasty way to start your day.

INGREDIENT­S

¼ cup regular rolled oats

¼ cup milk, almond milk, or coconut milk ¼ cup Greek yogurt (plain or vanilla) ¼ cup pureed cooked pumpkin

1 tbsp chia seeds

1-2 tsp maple syrup to taste

¼ tsp pumpkin pie spice, recipe below

METHOD

Mix all ingredient­s in a jar and shake until well blended. Leave in the refrigerat­or overnight. Garnish with nuts of your choice before serving.
