Blackberry fool
SERVES: 6 TIME: 15 minutes
INGREDIENTS
500g blackberries
100g sugar juice of 1 lemon
330ml cream
200ml yoghurt
METHOD
1 Heat the blackberries, sugar, and lemon juice in a pot until the sugar dissolves, then leave to cool. You can adjust the ratios depending on your taste preference, and the sweetness (or not) of the blackberries.
2 Whisk the cream and fold through the yoghurt.
3 Layer with the blackberry syrup in glasses and garnish with fresh blackberries.
