ABSOLUTELY love when new baby carrots are in season — they’re delicious to eat straight out of the garden and are a real treat to add to as many summer meals as you can.

I have made the carrots the

www.scoutwines.co.nz real hero here and kept it simple by adding a green tahini sauce and some herby nuts and seeds to garnish.

If you want to make this into a larger salad, simply add a can of strained lentils and plenty of garden leaves (rocket, beetroot leaves, spinach) to the carrots before dressing with toppings.
