ITALIAN BEEF BURGERS WITH CARAMELISED ONIONS & GARLIC AIOLI

Ingredients Onion
■ 1 red onion, thinly sliced
■ 1 capsicum, thinly sliced
■ 1 drizzle of oil
■ 1 Tbsp balsamic vinegar
■ 1 tsp brown sugar
Patties
■ 600g beef mince
■ 1 egg
■ 1 tsp sweet paprika
■ 1 tsp onion powder
■ 1 tsp garlic powder
■ 1 tsp oregano
■ 1⁄4 tsp rosemary
■ 1⁄2 tsp salt
■ 50g panko breadcrumbs
■ 2 tsp wholegrain mustard
■ 1 drizzle of oil
Buns
■ 6 sesame seed burger buns, cut in half
Fillings
■ 2 tomato, thinly sliced
■ 100g baby spinach
■ 4 Tbsp garlic aioli
Method
Preheat oven to high grill.
Prep and cook onion:
Thinly slice onion and capsicum. Heat oil in a small pot on mediumhigh heat. Cook onion and capsicum for about 7 minutes, until soft and starting to brown. Add vinegar and sugar and cook a further 1-2 minutes, until caramelised.
Set aside, covered.
Meanwhile, prep patties:
In a medium bowl, mix all patty ingredients together (except oil), season with salt and pepper and mix to combine. Divide mix into 6, roll into balls, then flatten into patties, about 1.5cm thick.
Cook patties:
Heat oil in a large fry-pan on medium heat. Cook patties, in batches, for 4-5 minutes each side, until cooked through.
Prep buns and fillings:
Cut buns in half and place on an oven tray. Grill on upper oven rack for about 2 minutes each side, until toasted. Thinly slice tomato.
Serve:
Buns filled with spinach, tomato, patties, garlic aioli and onion.
