RESTAURATE­UR Lorenzo Bresolin inherited his sense of style and many of his clothes from his late father, Remiro Bresolin, who ran legendary Wellington restaurant Il Casino. “We grew up borrowing his suits to go to school balls. He’d always be really keen to lend them to his boys, and my stepmother would be like, ‘you can’t let them wear that, it’s too expensive’,’’ Bresolin says.

‘‘He’d sort of smuggle out the goods to us, and we’d go out looking a million bucks.”

The co-owner of Duke Carvells, Crazy Horse, and Scopa eateries, the 30-year-old wears cravats and shirts which are the envy of many.

Recently awarded the Le Cordon Bleu Outstandin­g Contributi­on to Wellington Hospitalit­y title, Bresolin’s most distinctiv­e feature is his dramatic facial hair. Every second bartender in town seems to be (attempting) to follow his trend.

As a child, he always dreamed of having a moustache, and he would sport a fake one at every opportunit­y.

“This particular piece of follicle fortitude has probably been here for about four years,” he says.

“I used to trim it, and then in February this year I threw the razor out and grew the beard.

“It’s a lot of maintenanc­e after a meal, or during dining. Chopsticks are a valuable friend, and I love having my toast cut into soldiers. It’s just ribs and chicken wings you’ve got to look out for.”
