Put the quinoa in a sieve and rinse under cold running water, then drain and put in a saucepan with 1 cup water.

Cover and bring to the boil over medium heat, then lower the heat and simmer for about 12 minutes or until the water has absorbed and the quinoa is cooked. Tip into a large bowl.

While the quinoa cooks, make the dressing by shaking the ingredient­s together in a screwtop jar. Pour twothirds of the dressing over the quinoa and stir well, then add the spring onions, nectarines, spinach and mint. Toss together gently and drizzle over the remaining dressing if required.
