What began as a family recipe passed down has become an award-winning sauce business for one multi-generation Dargaville family. Similar to many small food businesses, feedback and spiraling demand from friends and family transforme­d Wild West Worcester into a nearcult-favourite sauce. The brew infuses for 18 months before spending 14 hours slowly bubbling down into a flavoursom­e condiment. After another few months of resting, it's into the bottle and off to stockists throughout the North Island. The range has grown to include beetroot relish, ghost-pepper hot sauce and more. Good sauce doesn't come cheap — a bottle of the brand's Black Sauce ranges from $25 to $30, but good things take time (and a lot of effort). One Whāngārei-based butcher can barely keep it on his shelves. “Once someone tries it once, they keep coming back and keep coming back.”
