The Waipara Valley is a vineyard-dense region that was once a sleepy railway town. In 1986, paddocks turned to vineyards practicall­y overnight thanks to a pioneering irrigation scheme, and today more than 75 wineries inhabit the valley. The wine that flows is proof that the dry north Canterbury climate treats pinot noir and riesling grapes especially well.
