Anyone with saltwater in their veins knows that fishing is much more than a freshly caught meal — particular­ly in unfamiliar waters. There's an adrenalin rush and the anticipati­on of seeing and catching species not otherwise found at home. The Kaikōura Canyon lends itself well to such an experience — its nutrient-rich waters sustain an ecosystem packed with crayfish, blue cod, sea perch, and many more. This abundance often means more fish and faster catching times. Most charters run a similar two-hour or half-day trip; the excitement starts just offshore from the South Bay Marina, where fishers peer into crayfish pots with Christmas-like anticipati­on. Even keen fishers will delight in hauling in a wriggling crayfish (or two or three) from the sea. That's not to say fishing charters are reserved for those with prior experience. On the contrary, the mountain views and chance of seeing dolphins or seals provides an exciting opportunit­y for beginners and anglers alike.
