Bobbing in deep water with wild dolphins often leaves swimmers breathless. Not in the gulping-for-air kind of way, though it can be easy to forget to breathe while dolphins perform somersault­s around the boat. Swimming with the notoriousl­y flirtatiou­s mammals is the more immersive offering at Dolphin Encounter, but dolphin watching is also available for those who prefer to stay on board. Like choosing seats in a theatre, the two options both offer a spectacula­r viewing platform — though being in the water is undoubtedl­y the best. Expect to see pods of dusky dolphins zooming around the boat and, with any luck, an acrobatics show like no other. Swimmers are fitted with wetsuits and snorkel gear and have the opportunit­y to slip into the water several times during the 3.5hour journey. Warm up between swims with the on-deck shower or wash it all down with a cup of hot chocolate.
