Smoked fish pasta bake

Serves 4

White sauce

3 cups milk

50g butter

¼ cup flour

Pasta bake

2 cups short pasta such as penne, macaroni,

farfalle (a mix is fine, see pantry notes)

2 Tbsp olive oil

1 onion, finely chopped

3 cloves garlic, crushed to a paste with 1 tsp salt 1 small bunch coriander or parsley, leaves removed and chopped, and stems finely chopped

1 small bunch cavolo nero, leaves removed and

shredded, stems finely chopped

1 red or yellow capsicum, thinly sliced

1 stalk celery, including leaves, thinly sliced 1 courgette, thinly sliced

1 small smoked fish, bones removed and flaked

into pieces (approx. 2 cups)

⅓ - ½ cup cream

Juice of 1 lemon

1 handful dill and chives, chopped

1 cup breadcumb mix (see recipe right) or use

store-bought
