This recipe can feed up to 8 peo­ple

Rice and beans with lime dress­ing

3 cups of brown rice

6 cups of wa­ter

1 bag of green beans

1 bunch of radishes

1/2 cup of raw peanuts chopped

1/2 cup of Chi­nese pars­ley or co­rian­der

chopped

1 can of tuna or mack­erel in spring wa­ter (op­tional) 1 tbs oil

Dress­ing

1 tsp of co­conut sugar or honey 1 chilli finely sliced

1/2 cup of lime juice

1 cup of co­conut oil

1 tsp of grated gin­ger

1/2 clove of gar­lic sliced Salt to taste

Method

If pos­si­ble soak rice overnight in wa­ter then rinse out. Put rice and wa­ter in pot over high heat then low heat un­til the rice has ab­sorbed all the wa­ter. Cut beans half-fin­ger width and quar­ter radishes. Heat oil in a pan. Fry beans then radishes. Toss the beans and radishes through the rice and add any ex­tra raw leafy greens you like. Add tinned fish. Put all the dress­ing in­gre­di­ents in a bot­tle or bowl and shake or whisk. Stir the dress­ing though the rice and veg­eta­bles.
