And just like that, it’s December. Christmas is in the air and in the fridge and all around the house! Our whānau always comes together for Christmas and there are often rolling meals with all the branches of family and friends. I love bringing together a feast, and following delicious recipes that are actually simple and special. This Christmas Pams has created some incredible festive meals that will keep Christmas cheer high and festive stress low. If you’re working with lower costs this Christmas, consider their budget- conscious menu for the holiday.

For a fresh take on the summer salad, whipping up this vibrant pea, lemon and mint salad was simple, visually pleasing and full of punchy flavours.

The lightness of the salad was perfectly paired with the juicy mushroom and kumara wellington. The sweet kumara combined with the earthy mushrooms and light flaky pastry was a delightful main. Pams flaky puff pasty is easy to work with, even on these humid summer days.

To top off this fuss-free dining experience I was thrilled to assemble our family favourite: crème brûlée tarts. For those who love crème brûlée but are intimidate­d by the traditiona­l method, I highly recommend keeping this cheat’s recipe at the front of the cook book. The kids love it, the adults indulge on it and I always keep an extra one hidden away to devour when the crowds have dispersed.
