A mushroom frittata with a punch of blue
Frittata with grilled field mushrooms and Kikorangi
Serves 4
■ 4-6 large flat field mushrooms, cut into 5mm slices
■ 2 tablespoons olive oil, plus extra for brushing
■ 1 clove of garlic, cut into slivers
■ 6 small new potatoes, scrubbed
■ 25g butter
■ 1 tablespoon chopped oregano leaves
■ 8 free-range eggs (size 6), whisked with 2 tablespoons water
■ 100g Kikorangi or crumbly blue vein cheese
Preheat the grill to moderate. Place the mushroom slices on a baking tray, then brush with oil and top with garlic slivers.
Grill for 5 minutes or until tender, turning them once. Preheat the oven to 160 degrees Celsius.
Using a mandoline or sharp knife, cut the potatoes into 1mm-2mm discs then cook for 1 minute in boiling, salted water. Drain and cool under cold running water in a sieve.
Melt the butter and 2 tablespoons of oil in a large, ovenproof frying pan until bubbling, then add the cooled potatoes and oregano.
Fry until the potato edges start to brown, then turn them and top with the mushrooms. Pour the eggs over the mushrooms, then crumble the cheese on top.
Put the frying pan in the centre of the oven, then cook for 15 minutes or until golden, slightly puffy and set. Allow to cool slightly before serving with a salad.
Ialways love to see New Zealand designers being represented internationally, especially when the model in question is none other than style icon and supermodel Irina Shayk, who I’ve written about here a number of times. This time is more special, as she’s stepping out in ultra chic New Zealand label Paris Georgia, known for impeccable and exquisite, yet somehow still very wearable, pieces, which often start international trends rather than follow them.
It’s not just a one-off occurrence either. Everyone from Kate Hudson, Candice Swanepoel and Rosie Huntington-Whiteley to Kendall Jenner, Ciara, and Kourtney Kardashian have been spotted wearing the brand.
Launched by young designers Georgia Cherrie and Paris Mitchell Temple in 2015, with just six luxurious ‘‘basics’’, including their instantly sought-after signature slip dresses, Paris Georgia now offers a full wardrobe of covetable separates.
The directional pairing in question here, officially known as the Bon Bon Belted Buckle Trench and Cargo Trousers, made recent high fashion headlines. Vogue embraced the unexpected hue, which it mistakenly calls cream but is, Mitchell Temple assures me, a soft yellow the brand has named Post-It, for fairly self-explanatory reasons, as ‘‘a risky winter trend’’ – ‘‘uber luxurious, but a choice of light colours in winter is just begging to get dirty’’.
Lucky for us it’s still summer in New Zealand, and it turns out there are plenty of pale yellow pieces to pick from (though I think she looks like a literal ray of stylish sunshine against all that chilly grey).
