STRAWBERRY CHEESECAKE GLASSES
BASE: 1 cup almonds 3/4 3⁄4 cup dates 1/4 1⁄4 cup desiccated coconut
TOPPING: 1 1⁄2 cups cashew nuts raw 4 Tbsp lime juice 1/4 1⁄4 cup coconut oil melted 3/4 3⁄4 cup water 3 Tbsp liquid honey 1 cup frozen strawberries Garnish: blueberries Garnish: mint
Place almonds, dates and coconut into food processor and blend until a fine texture. Press into serving glasses to create the base. In a blender add cashews, lime juice, coconut oil, water and honey and blend until mixture is smooth and creamy. Add strawberries and blend well, scraping down the sides of the blender as needed. Pour mixture onto the base and spread evenly. Place in freezer to set. Can be stored in the fridge once set.
