It was a sunny day the other day, so I went for a bit of a stroll through town. It was lunchtime, and it was busy. Plenty of people were out enjoying the weather. They were also enjoying something else: plates full of fried chicken. It seemed like every eatery I walked past, from cafes to chain stores to boutique burger joints, were serving up variations of the delicious deep-fried delight. I couldn’t help myself. I had to have some. It turns out there’s plenty of variety on offer, and some, like Kiwi chef Morgan McGlone, have taken the dish and turned it into an art form.
