A salmon curry that tastes good and also follows dietary advice

Silky Salmon Curry

Ingredient­s

2 Tbsp olive oil

2 tsp curry powder

2 tsp Thai red curry paste 2 garlic cloves, minced 2 Tbsp tomato paste 400g skinless salmon fillet salt and pepper 1 cup coconut milk

Method

Heat the olive oil in a frying pan over medium-high heat. Add the curry powder and cook, stirring, for one minute, until fragrant. Add the red curry paste, garlic and tomato paste and cook for one minute.

Season the salmon with salt and pepper and add it to the pan, turning to coat in the sauce.

Reduce the heat to medium and cook the salmon for four minutes, then flip and cook for a further three minutes. Finally, add the coconut milk and cook for a further five minutes, until the sauce has reduced slightly, then serve.
