- 1 cup water cup quinoa 420g can kidney beans, rinsed and drained 1 red capsicum, diced 1 cup each: whole kernel corn, diced cucumber, shredded carrot 2 spring onions, diced tsp cumin seeds cup good vinaigrette 100g feta cheese, crumbled Serves 4
FETA, BEAN & QUINOA SALAD
Simmer the quinoa in the water for 10 minutes. Combine the beans and remaining vegetables in a large bowl. Stir in the drained quinoa. Combine the cumin and dressing. Toss the salad with the dressing just before serving. Top with the feta. Great served with crusty rolls.
