Whangarei Report - - BITE - 1 cup water cup quinoa 420g can kid­ney beans, rinsed and drained 1 red cap­sicum, diced 1 cup each: whole ker­nel corn, diced cu­cum­ber, shred­ded car­rot 2 spring onions, diced tsp cumin seeds cup good vi­nai­grette 100g feta cheese, crum­bled Serves 4


Sim­mer the quinoa in the water for 10 min­utes. Com­bine the beans and re­main­ing veg­eta­bles in a large bowl. Stir in the drained quinoa. Com­bine the cumin and dress­ing. Toss the salad with the dress­ing just be­fore serv­ing. Top with the feta. Great served with crusty rolls.
