■ 50ml Seedlip Garden 108
■ 35ml Watermelon and Basil Shrub (see below)
■ 1 Tbsp egg white or aquafaba
■ Ice cubes Garnish:
■ Basil leaf Add all ingredients with NO ice to a shaker and dry shake. Add ice to the shaker and shake again. Double strain into a chilled coupe glass.
Garnish with a basil leaf.
WATERMELON AND BASIL SHRUB
■ 1⁄2 watermelon
■ Handful of basil
■ 200ml organic apple cider vinegar
■ 200gm sugar Chop up watermelon flesh and add to a large mason jar with the basil leaves and muddle.
Add the vinegar and sugar and then shake. Leave for 24 hours. Fine strain and bottle. Keeps in fridge for a month.
