Good Morning Muffin

SERVES 4 PREPARATIO­N & COOKING 40 MINUTES

1 tablespoon olive oil 1 onion, finely chopped 1 garlic clove, crushed 500g pork mince ½ cup fresh breadcrumb­s 1 free-range egg, lightly beaten 1 / cup grated tasty cheese 3 1 / cup finely chopped mixed

3 fresh herbs (thyme, parsley, sage, chives) 3 teaspoons Dijon mustard 1½ tablespoon­s tomato paste 1 tablespoon olive oil salt and freshly cracked black

pepper 5-6 rashers bacon 4-6 free-range eggs 1-2 avocados, smashed with

a little lemon juice 5-6 English muffins or Turkish

buns, toasted and buttered 2 large ripe tomatoes, sliced 1 bunch fresh basil leaves

1. Preheat oven to 50°C. Heat the first measure of oil in a frying pan over a medium heat. Cook onion for about 7 minutes or until it is very soft.

Add garlic and cook for another 2 minutes. Transfer to a large mixing bowl and leave to cool slightly. Wipe the pan clean.

2. Add mince, breadcrumb­s, egg, cheese, herbs, mustard, tomato paste and olive oil to onion and garlic mixture. Season generously with salt and pepper. Mix to combine evenly with clean hands, then shape into 5-6 patties.

3. Heat a little oil in the pan over a medium-high heat. Add patties a few at a time, then cook until golden-brown on both sides and cooked through. Cover with foil and keep warm in the oven while you cook the rest.

4. Fry bacon in the same pan and keep warm in the oven. Fry eggs sunny side up.

5. To serve, smear avocado on a toasted, buttered muffin base, add tomato slices, basil leaves, a patty, some bacon and an egg. Slap the lid on top and dig in!
