Trim both ends of the pineapple before removing skin, so you have an even base to balance the fruit on.

Once you remove the pineapple skin, slice out the hard middle core with a large sharp knife and discard.

It’s important the lime rind is finely grated, so use a microplane or the small grating side of a box grater.
