APPLE, PEAR & STRAWBERRY CRUMBLE

SERVES 4 PREP 15 MINS COOK 30 MINS

• 4 Granny Smith apples, peeled, cored, cut into chunks

• 3 pears, peeled, cored, cut into chunks

• 250g punnet strawberri­es, hulled, quartered

• 1/3 cup caster sugar • cream or ice-cream, to serve

CRUMBLE

• 90g cold butter, chopped

• ½ cup plain flour, sifted

• ½ cup brown sugar

• ¼ cup shredded coconut

• ¼ cup rolled oats

• ¼ cup chopped pecans

• ½ tsp ground cinnamon

1 Preheat oven to 180°C. Lightly grease 4 x 1-cup ramekins.

2 In a medium saucepan, cook apples and pears on medium heat 3-4 mins until almost tender.

3 Add strawberri­es and sugar. Simmer, stirring, 1 min. Spoon mixture into dish or ramekins.

4 CRUMBLE Meanwhile, in a medium bowl, rub butter into flour using fingertips until mixture resembles breadcrumb­s. Stir remaining ingredient­s through. Sprinkle evenly over fruit.

5 Bake 15-20 mins until golden and bubbling. Serve warm with cream or ice-cream.
