Woman’s Day (New Zealand)

EASY BAKLAVA

SERVES 6 PREP 30 MINS COOK 25 MINS + COOLING

• 3 cups mixed unsalted nuts, toasted (see Tip)

• 3 apples, peeled, cored, diced

• 7 sheets filo pastry

• 250g unsalted butter, melted

• 1 cup water

• 1 cup caster sugar

• 2/3 cup honey, warmed

• 1 orange, finely grated zest, juice

• 1 lemon, finely grated zest, juice

• 2 cardamom pods, bruised

• 1 cinnamon stick

• ice-cream, to serve

1 Preheat oven to 180°C. Lightly grease and line two oven trays with baking paper.

2 In a food processor, pulse nuts until finely chopped. Transfer to a bowl. Stir through apples.

3 Place 1 sheet filo on clean surface. Brush with butter. Fold in half and brush with butter. Sprinkle with ¼ cup apple and nut mixture (leave 2cm border).

4 Fold in long sides. Roll up tightly into a log. Place on tray. Repeat with rest of pastry, butter and nuts.

5 Bake 20-25 mins until golden. Cool slightly.

6 Meanwhile, in a small saucepan, combine water, sugar, honey, zest, juice, cardamom pods and cinnamon stick over medium heat. Bring to boil. Boil, without stirring, 5 mins. Set aside to cool.

7 Place logs in a large shallow dish. Pour over cooled syrup. Set aside 1 hour. Slice and serve with ice-cream.
