LAMB CHOPS WITH ORANGE KU¯ MARA MASH & BEANS

SERVES 4 PREP 5 MINS COOK 25 MINS

• 1.5kg (8 small) lamb forequarte­r chops

• 1 tbsp olive oil

• 1 tbsp Moroccan seasoning

• 2 garlic cloves, crushed

• 750g orange ku¯mara, peeled, chopped

• 50g butter, chopped

• 1 tsp ground cumin

• 200g green beans, steamed, to serve

1 In a large bowl, combine lamb, oil, seasoning and garlic. Season to taste and mix well.

2 In a large saucepan, cover ku¯mara with water and bring to boil on high. Reduce heat to medium and simmer for 10-15 mins until tender. Drain. Mash with butter and cumin. Season to taste, keep warm.

3 Meanwhile, preheat a chargrill pan (or barbecue grill) on high. Cook chops 3-4 mins each side for medium. Serve chops (reserving 2 for lunch) with mash and green beans.
