SALMON & AVOCADO SALAD

SERVES 4 PREP 10 MINS COOK 5 MINS

• 60g rocket

• ½ avocado, seeded, sliced

• 1 green apple, thinly sliced

• 4 radishes, thinly sliced

• 4 mini cucumbers, thinly sliced

• 2 reserved cooked salmon portions, flaked

DRESSING

• ¼ cup olive oil

• 2 tbsp white balsamic vinegar

• 2 tsp Dijon mustard

• 2 tsp honey

• 1 garlic clove, crushed

1 DRESSING Whisk all ingredient­s together.

2 Arrange salad ingredient­s on serving platter. Scatter salmon over. Drizzle with dressing.
