CHILLI & BASIL PORK

• 2 tbsp red curry paste

• 1 red long chilli, thinly sliced

• 2½ cups reserved pork mixture

• 450g packet microwave rice

• ¼ cup basil leaves, torn

• 1 bunch broccolini, trimmed, blanched

• sweet soy sauce, toasted sesame seeds, to serve

1 Preheat a frying pan on high. Cook curry paste and chilli, stirring, 1-2 mins until fragrant. Add pork mixture. Simmer 10 mins until thickened.

2 Prepare rice following packet directions. 3 Stir basil leaves through pork. Serve with broccolini and rice, drizzled with soy sauce and sprinkled with sesame seeds.
