SPICED BERRY FRENCH TOAST

Try this low-GI delight for a healthy start to the day

SERVES 4 Whisk 2 large eggs, 1 cup low-fat milk, 1 tsp vanilla bean paste, 1 tsp orange zest oil and ¼ tsp ground cinnamon together in a shallow bowl until well combined. Heat a nonstick fry pan over medium heat and drizzle with oil spray. Dip 4 thick slices high-fibre, low-GI bread in the egg mixture, alternatin­g both sides, allowing to soak into the middle of the bread. Cook 2-3 mins on each side or until golden. Place on a plate and keep warm. Serve French toast immediatel­y topped with raspberrie­s and strawberri­es, drizzled with maple syrup or low-GI honey.
