MOTHER OF ALL CREPES
Whip up a batch of chia crepes topped with caramelised banana for Mum – and yourself
Whip up a batch of these chia crepes with caramelised banana and black sesame seeds to show your mum how much she means to you this Mother’s Day.
SERVES 4 INGREDIENTS
¾ cup plain flour
1 Tbsp white chia seeds 2½ Tbsp coconut sugar
½ tsp cinnamon
1 cup milk or almond milk ½ cup water
30g coconut oil, melted 4 bananas, halved lengthways ¾ cup yoghurt
2 Tbsp blueberries
2 tsp black sesame seeds
1 Combine the flour, chia seeds, 2 tsp of the sugar and cinnamon in a bowl. Make a well in the centre; gradually whisk in the milk and water until smooth.
Stand for 20 minutes.
2 Heat a 26cm nonstick frying pan over a high heat. Lightly grease with some of the coconut oil. Pour ½ cup of the batter into the centre of the pan, tilting the pan nd to coat the base in a thin layer; cook for 1 minute or until browned. Turn, cook on the other side until golden. Transfer to a plate; cover with foil to keep warm. Repeat with remaining batter, greasing with coconut oil, to make a total of 4 crepes.
3 Reduce the heat to medium-high. Sprinkle the remaining sugar on the cut side of the banana halves.
Cook cut-side down in the frying pan for 1 minute or until caramelised.
4 Divide the crepes between the plates. Top with the caramelised banana, yoghurt and blueberries; sprinkle with sesame seeds.
