CULINARY Tasty and delicious yam goulash

Who isn’t in love with yam? Whatever form you like yam made, it’s one crop that all Nigerians cherish. Delicious yam pottage, also known as yam goulash, is tasty and delicious with no stress in cooking it: it is healthy and saves cost.

1/2 tuber of medium size yam 5 large fresh tomatoes 3 medium red bell peppers 1 medium green bell pepper 3 garlic cloves 1 onion bulb 1/2 cup of sweet corn 2 cooking spoons of palm-oil 1 tablespoon of dry ground pepper 1 teaspoon of curry powder 1 teaspoon of thyme 1 table spoon of crayfish 2 seasoning cubes Salt to taste

Blend fresh tomatoes, fresh pepper, two red bell peppers, onion and garlic cloves. Set blended purée in a pot on medium heat and leave to dry.

Note: The remaining bell pepper will be used for garnishing. Fry dry tomato purée with palm oil.

Peel the skin off the yam and dice yam in big cubes, when yam is half-way cooked, stir in fried tomato purée.

Add crayfish, remaining seasoning

1 cup (250ml) of lemon juice from about 3 to 4 lemons 1/3 cup of (80ml) maple syrup 1 liter of water 2 lemons cut into slices for garnishing
