CULINARY fluffy Christmas

What’s Christmas without cake? Christmas cake is a must, and for a good reason too. A richly spiced fruit cake is a winner with everybody. This year, you won’t have to buy cake from a store because we are sharing the recipe on how to make the most moist and fluffiest Christmas cake ever. Ingredient­s • 2 cups of flour • 250 grams of butter • 4 eggs • 170 grams of sugar • ¼ tablespoon of baking

powder Vanilla essence A mix of dried fruits and nuts (raisins, sultanas, berries, cherries, orange and lemon peel, walnuts, almonds and pistachios) 1 teaspoon of cinnamon 1 teaspoon of nutmeg 1 teaspoon of ground spice 1 cup of apple or cranberry juice Direction

Start by soaking the fruits in • • • • • • the juice overnight or longer. The fruits should have soaked up the liquid

Preheat your oven to 150 degrees Celsius and grease a cake pan, set aside.

In a bowl, sift the flour and baking powder together and keep.

In a different bowl, cream the butter with the sugar until light and fluffy.

Now, add the eggs one by one until well combined and smooth, followed by the vanilla essence, cinnamon, nutmeg and ground allspice.

You can now add your flour mixture bit by bit into the wet ingredient­s and mix to combine well after each addition. After you have properly mixed in the flour, add the fruits and stir well.

Transfer your batter to your greased cake pan and bake in the oven until you begin to smell the cake and a toothpick comes out clean.

Remove from the oven and allow to cook before removing the cake from the pan and voila! Your Christmas cake is ready!
