Delicious tasty meals for Iftar

Ramadan is a time when various culinary skills are exhibited. Well, this week, we will be offering a three-course meal, appetizer, main dish and a dessert accompanie­d with a drink. This meal is sure to keep you full and energized for the day. This can also be the perfect three-course meal for Eid (Sallah Day) to celebrate the end of Ramadan. You won’t go wrong serving your guests these delicious meals.

Main dish: Chinese Rice and Pepper Steak

Ingredient­s for Steak

1 kg rump steak, cut into strips- cut into strips, then boiled for about 15 mins in a pressure cooker with some ginger/ garlic, 2-3 cups water, salt/pepper, 1 tbs. of vinegar and a tbsp. of oil. Drain and set aside. Reserve the stock.

3 large peppers/capsicum, cut into thick strips, 2 grated medium-sized onions, 2-3 spring onions chopped finely,1/2 tbsp. each ginger/garlic paste,2-3 tbsp. tomato paste/puree, 2-3 green chillies, chopped, 2 tbsp. oil, 1 tsp. cornflour, mixed with water into a paste, Soya sauce and salt to taste. Ingredient­s for Chinese Rice 4 cups long-grain rice, soaked for 15-20 minutes, 3 tbsp. oil, 2 tbsp. chopped spring onions, 1 tsp. each ginger/garlic paste, 1 cubed capsicum (or you can chop a little from each colour), 2 grated carrots, 2 tbsp. sweet corn, Salt to taste, Soya sauce and 5 cups boiling hot water.

Instructio­ns For the Steak

Heat the oil in a wok, add the onions and fry until soft and translucen­t. Add the ginger, garlic and fry for a minute, add the green chillies and the capsicum

strips. Stir fry for about 3 minutes, and add the tomato paste and salt. Cook for about 2 more minutes, and then add the stock.

Cover and simmer until the capsicum is softened, then add the boiled beef strips and the cornflour paste.

Mix together, and let it simmer for another 5 minutes, then splash on soya sauce and turn off the stove.

For the Chinese Rice

Heat the oil in a deep pan. Add onions, then ginger, garlic, and carrots. Stir fry for a while; add the capsicum and sweet corn. Add the drained rice, and stir fry for a couple of minutes, then add the hot water and salt.

Let it cook on medium heat until rice is almost cooked and not much water left. Splash on some soya sauce, cover and put in the oven for about 10 minutes.

Serve & Enjoy!

Drink: Lemonade

A fun, yummy and thirst-quenching drink. Can be served with a slice of lemon as a garnish, or blue coloured ice-cubes. Ingredient­s 1 cup water, 1/2 cup sugar, blue food colour, 1/4 cup lemon juice, freshly, squeezed and 7-Up drink

First, make the lemon syrup. Mix 1 cup water with half cup sugar and a pinch of salt, boil until it simmers and the sugar is all dissolved, then turn off and let this syrup cool completely.

Add blue colouring and a quarter cup of freshly squeezed lemon juice. Mix together and adjust until the colour is to your satisfacti­on.

Now add equal amounts of this prepared blue lemon syrup and 7-up. Add ice cubes or lemon slices and serve chilled!
