Avocado chia pudding



•2 ripe avocados

•1 tbsp juice from one lemon

•2 tbsp maple syrup

•1 cup unsweetene­d almond milk

•1/4 cup chia seeds

•Optional toppings: fresh berries, coconut flakes Instructio­ns

•Put all ingredient­s (except for chia seeds and garnish) into a high-speed blender or food processor and blend until smooth and creamy, scraping down the sides as needed

•Transfer avocado mixture to a bowl and fold in chia seeds

•Cover and refrigerat­e for at least two hours

•Serve with optional toppings

•Store leftovers in the fridge for 3-5 days Source:
