Dishes to-go at nawwTy's kitchen

We knew her as a Pitoy Moreno signature model, one of Manila’s It Girls who made gentlemen’s hearts flutter. Today, Trish Panlilio operates nawwTy’s Kitchen and is busier than ever due to take-out and delivery orders necessitat­ed by the community quarantine. Trish is not one of your child prodigies who, we are told, started cooking at age five or nine or 12. Instead, it was in her adulthood, after she had married and had her sons already. Eating well, though, is something she grew up with. The Panlilios loved a good Filipino breakfast. Her mom, the legendary jeweler Fe Panlilio, relished taba ng talangka or crab fat. The man of the house, Atty. Jose, who was his daughter Trish’s soulmate, enjoyed Tagalog bistek (beef steak). When daughter and father bonded, they ate dimsum and a perfectly cooked steak, all the while having a great conversati­on. She will serve the latter come Father’s Day because it is also his death anniversar­y. It will even be made more tasteful with Trish’s version of a steak sauce. Comfort food was always available in the Panililio home. These included nilaga, bulalo and hito, mostly “kapampanga­n” favorites and classics. Trish also loved various chichiria but when she wanted something filling, her choice was Tropical Hut hamburger. Initially, as a culinary artist, Trish made sauces for salad, pasta and roasts. “I decided to learn how to cook because of my love for eating,” says Trish, who is self-taught.

Interestin­gly, her sons can cook, too, although she herself did not teach them. “They only observed me. Besides, they decided to learn on their own as a matter of necessity,” she points out. “They’re experts when it comes to breakfast fare.”

At nawwTy’s Kitchen, three efficient and very skilled home cooks assist her. But with the quarantine keeping her at home, she learned how to bake cookies. Hardly a sweet tooth, she now considers them her favorite “so we bake them every day.”

The recent months of the lockdown have made her even busier with nawwTy’s Kitchen receiving orders and delivering them. Customers’ favorites, especially for their Sunday lunch or brunch, are paellas, roasts and lasagna. She is not rattled, though, because aside from having a capable staff, no matter if few, she has her sons who assist her from recipe formulatio­n, stringent food tasting and critiquing, to packaging and dispatchin­g, especially when there are bulk orders.

Trish’s message to nawwTy’s Kitchen clients: We look forward to serving you luxe comfort food at its finest. Among the specialtie­s of the house, she recommends their signature dish, crab fat paella, paella negra with homemade aioli, squid adobo, laing, Bicol Express and 33 Clove Garlic Roast Chicken.
