Chef Alain kicked off the fes­tiv­i­ties with a pre­sen­ta­tion on the im­por­tance of eat­ing healthy. With more and more people con­cerned about food and where it comes from, and with more chefs and restaurants em­brac­ing “farm-mar­ket,” Chef Alain adds, “I do all what I can to di­rect the fu­ture of cui­sine in this di­rec­tion. In fact, what is at stake here is much more than the fu­ture of cui­sine: it is our fu­ture, the fu­ture of the planet where we all live.”
