In Jan­uary of 2015, we first fea­tured Pepita’s Kitchen and Tam­bai. Back then, Dedet de la Fuente was a home­maker who’d be­come an ac­ci­den­tal restau­ra­teur. Her “le­chon de­gusta­cions”, star­ring her sig­na­ture “stuffed le­chons”, had just been dis­cov­ered by the city’s culi­nary cognoscent­i. Tam­bai was less than a month old when it first ap­peared in this mag­a­zine. It was ba­si­cally just a tiny twelve-square me­ter store­front, but we al­ready saw its po­ten­tial: “I’m deliri­ously happy when booze and bar­be­cue and best of all, good friends and great con­ver­sa­tions, all align un­der the stars. Which is why Tam­bai is my new fa­vorite bar. It’s per­fectly sim­ple, and sim­ply per­fect.”

Three years later, Pepita’s has rev­o­lu­tion­ized “pri­vate din­ing”, and Tam­bai has be­come a cat­a­lyst in the Pobla­cion’s evo­lu­tion from a quiet res­i­den­tial neigh­bor­hood to the hottest din­ing dis­trict in Makati. We need to go back, and we want to take you along…
