At the heart of Nobu Hotel at City of Dreams Manila is the world-renowned Nobu Manila, known for its innovative new-style Japanese cuisine fused with Peruvian influences. Its namesake, Chef Nobu Matsuhisa, is an award-winning culinary legend at the helm of the Nobu empire spanning five continents with over 40 restaurants astounding the world over with his technical and artistic prowess. For one day, Chef
Nobu made his way back to Manila for a gastronomic experience right at his eponymous restaurant.
Prior to the much-anticipated dinner affair, Chef Nobu captivated members of the press with a live demonstration on preparing Japanese classics such as sushi and nigiri, while imparting some priceless advice: always cook with the heart and prepare meals just like how a mother prepares food for her child.
For dinner service, guests enjoyed a delectable eight-course Omakase menu with select dishes infused with local flavors, including the signature Umami Sea Bass with Green Papaya Salsa and a Sushi Cup Selection of Tuna Adobo, Tachiuo with Sakura Petal, Ika Noodle, and a side of White Fish XO Salsa and Tamago. Other mouthwatering dishes served were Yellowtail Sashimi with Jalapeno and Yuzu Soy; Butter Lettuce Salad with Yuzu Truffle Dried Miso, Parmesan and Kizami Yuba; and Mixed Seasonal Mushroom Soup with Lime and Negi. Closing the night’s service was a delightful Nobu Chocolate “Zen Garden” with Green Tea Sponge and Chocolate “soil” for dessert. Chef Nobu was joined in the kitchen by Nobu Manila’s Head Chef Michael de Jesus, Head Sushi Chef Keiichi Hirukawa, and the rest of the esteemed Nobu Manila team.
The celebrated chef’s visit to Manila was part of his Asia-Pacific tour which included other stops such as Singapore, Hong Kong, and Kuala Lumpur.
