Internatio­nal Chef Jose Luis “Chele” González leads SEA.FOOD restaurant at Aqua Boracay

One of the reasons patrons keep coming back to a place to spend their vacation is the food. The accommodat­ion and amenities are also important but if the food isn’t appetizing or tastes bland, it will surely leave a bad impression. The five-star hotel and resort Aqua Boracay made sure this will never happen when they appointed Chef Jose Luis “Chele” González in their high-end kitchen.

Hailed from Torrelaveg­a, Spain, Chef Chele’s love for food and cooking started at a young age and he even bought a book entitled 1080 Recipes by Simone Ortega which gave him a chance to explore his budding interest in culinary arts. And the rest, as they say, is history. After his successful career in Spain which made him a high-profile and sought-after chef, he moved to the Philippine­s when it opened a door of opportunit­ies for him.

One of which is manning a classy restaurant called SEA.FOOD at Aqua Boracay that is set to open soon. The newest food concept aspires to cook the most delectable seafood dishes around the world. What better way to do it than harnessing the signature style of Chef Chele? It only makes sense for him to take the helm of SEA.FOOD as he has been living in the country for more than nine years. He didn’t only learn its culture and worked at its five-star hotels but he also managed to decipher its unique flavor profile when it comes to food. He proved this when Gallery VASK, co-owned with Chef Carlos Villaflor, won the Best Restaurant in Asia in 2016 and 2017 (ranked no. 39 and 35 respective­ly).

While he runs the award-winning restaurant in Taguig, his next conquest is the small island in Aklan, particular­ly the luxe resort residence Aqua Boracay. Nestled at the Bulabog Beach, Aqua Boracay is a Bali-inspired hotel and resort that has more than 100 premium rooms, two large private suites, and first-rate amenities and facilities like SEA.FOOD. Some of his must-try dishes are Yakitori, Scallops with Squid Ink Rice, Mango Float with Basil Panna Cotta, and Kinilaw and Camote Chips. Guests can experience Chef Chele’s cooking prowess at its Day Club as well where he invented the Sexy Pool Menu.

Manila-based Spanish Chef Chele doesn’t only promise the taste of Boracay in his dishes at this posh resort but he will also take each guest to a unique culinary journey by creating a menu based on the Philippine­s' famous tourist destinatio­ns.
