Arugula and Pumpkin Seed Linguine Pesto

The Aphrodisia­c: Arugula and Pumpkin Seeds

Ingredient­s

1 pack linguine pasta 1 pack arugula 1 pack baby arugula 12 garlic cloves (peeled) 1/2 cup pumpkin seeds 1/4 cup peanuts 1 small pack fresh basil leaves 1 cup olive oil 1/2 cup parmesan cheese salt and pepper

Procedure

1. In a pasta stock pot, cook pasta untilil al ld dente. Set aside.id 2. In the same pasta water, blanch greens for 15 seconds then shock it in cold water. Pat dry the greens and set aside. 3. Using a blender, purée the following until semi smooth: garlic, blanched arugula (reserved some blanched baby arugula for tossing later), pumpkin seeds, peanuts, parmesan cheese, and olive oil. 4. Season with a little salt and pepper and give it a quick pulse. 5. Using a silicon spatula, transfer the arugula pesto mixture in a nonstick wok. Toss it together with the cooked pasta and some blanched baby arugula. 6. Serve with a little more parmesan cheese.
