With the enhanced community quarantine in effect during the current pandemic, the availabili­ty of whole, fresh, and minimally processed food can be limited. Oftentimes the most logical and economical way is to purchase food items that have a longer shelf life, allowing them to be stored in the pantry, refrigerat­ed, and frozen for months on end. Unfortunat­ely, the inadequate intake of fresh produce in the form of vegetables and fruits can be detrimenta­l to one’s health. Consumers also opt for canned meats instead of fresh or frozen meat, fish, and poultry. Another health issue is losing the nutritiona­l value of food that has been stored beyond its shelf life.
