The Back Room.
At a time when you can easily locate a place with nothing else than just a few strokes on your phone, The Back Room forces you to actually ask people around you for directions, otherwise you’ll never find it. This Prohibition-era-themed speakeasy is impressive for many reasons, like their 1,000-bottle liquor collection, which includes about 150 types of gin, more than half of which are not even available in the Philippine market. Amidst this vast selection of spirits, they have their own laboratory, where they make their own gin: Bees Knees, an ode to the Philippines manifested through its dalandan, malunggay, and sampaguita flavor notes. You’ll have every opportunity to try it, as this is the default pouring gin in many of their signature cocktails, unless otherwise specified.
