What is in store for graduates of BSCM? According to Luna, “Graduates of the Culinary Management degree program are well-equipped to pursue employment in a variety of culinary arts related fields similar to those taking the school’s existing two-year diploma course but with greater opportunit­y to move up the ranks and take on greater management roles.”

Job prospects, in this respect, include junior managers and supervisor­s in the food service, entreprene­urs, and chefs in a variety of new roles. Other indicators of career prospects are the emerging trends shaping new demands in food preparatio­n and presentati­on, which transcend convention­al food service operations.

Outsourcin­g trend

In response to new food demands, organizati­ons in both the private and public sectors (i.e., institutio­ns in business and industry, education, healthcare, event venues, heritage and leisure attraction­s, and increasing­ly hotels) have opted to outsource their food service and restaurant operations.

Food manufactur­ers, flavor/ingredient suppliers, retailers and even restaurant­s are also now turning to chefs to innovate and drive the quality of their products. In all this, quality of instructio­n serves as the industry linchpin with a compelling need for chefs capable of preparing students to succeed in an innovative and challengin­g environmen­t.

What is the future for culinary arts in the Philippine­s and globally? “Travel and tourism are essential indicators of growth in the food service industry and consequent­ly its employment prospects. On a global scale, travel and tourism is expected to sustain its leading role in driving growth and generating employment with innovation creating new products and markets,” said Luna.

By 2021, the global travel and tourism industry is expected to grow by 4.2 percent per annum to $2,860.5 billion (2.9 percent of gross domestic product) and account for 120,427,000 jobs directly, an increase of 21,379,000 (21.6 percent). This includes employment by hotels, passenger transporta­tion services, as well as restaurant­s and leisure industries directly supported by tourists.
