Paella ‘negra’ at Las Flores
Las Flores’ Paella Negra is black rice with cuttlefish infused with buttery garlic and olive oil aioli.
It has socaratt, the crusty layer of rice at the bottom of the
paellera. Las Flores’ Paella Negra is made more special with a generous topping of KatsuoBushi or bonito flakes. These finely shaved flakes are so light and extremely thin that the heat of the paella makes them seem to “dance.”

Rambla’s ‘sibu’ cocktail
It’s the award-winning drink by an award-winning bartender. Sibu, an original creation of Michael Tubiera, head bartender of Rambla, is definitely worth trying.
Tubiera found inspiration from, of all things, the Cebu lechon. His concoction mixes aromatic lemongrass, sweet pineapple, lemon, peppercorn syrup and savory pork demiglace with Ketel One Vodka.
Try his other creations like Gabriela with Tanqueray No. Ten, ampalaya shrub, secco and orange bitters. Tubiera hails from Ilocos and this drink is inspired by the Ilocano’s love of
ampalaya or bitter gourd.
