A GOOD STRETCH AT THE PRIDE

Ian Carandang wants you to stretch the rainbow. Inspired by the stretchy cheese toast from Bangkok that’s also become a hit in other countries like Taiwan and Singapore, the creative sorbetero behind Sebastian’s came up with his own—one that’s super colorful.

“I love grilled cheese and when I saw the rainbow variant, I thought, ‘Oh my god, this would do well at Pride.’ But how do I do it? How do you get that stretch?”

Ian dove headfirst into research and developmen­t, experiment­ing with a variety of cheese and colors, trying to melt them at different temperatur­es.

A month and 10 kg of mozzarella cheese later, he was ready with the perfect recipe.

Sebastian’s Pride Pops are already a favorite at Pride celebratio­ns, but last week, the brand also launched its Rainbow Grilled Cheese at the Metro Manila Pride March

in Marikina. It was a big hit—they sold out.

The stretchy sandwich is a rare savory offering from Ian whose crazy and delicious concoction­s have included Mangga’t Bagoong Sorbet and Champorado Ice Cream topped with Candied Dilis.

Rainbow Grilled Cheese is available at Sebastian’s flagship store at Vertis North.

There’s even a rainbow meter in the store so you can test your stretching skills.

Ian’s tips: “Keep your lower hand steady and slowly lift the other hand, let gravity do its work. Let the cheese from the top half melt down as you pull it. And then flip your hands and do the same with the other hand. Do it nice and slow.”

The sandwich is good, and wewhen we say good, we don’t just mean Instagramm­able (although it really is).
