As mun­dane as it may sound, highly rec­om­mended are Sugi’s per­fect tem­puras— par­tic­u­larly the and the shi­itake. They are per­fectly coated and fried at the ex­act temperature to pro­duce the won­der­ful con­trast between a crisp coat and the moist in­te­ri­ors. The agedashi tofu is another per­fect lit­tle start to a meal. It is served at just the right temperature and the sauce is the per­fect amount. A sim­ple salted chicken yak­i­tori stick is the go-to coun­ter­foil for all the fried dishes. It is lightly flavoured and clean.
